My Simple Upgrade to Mediterranean Rice

This lemony turmeric rice is my go-to side whenever I’m making something Mediterranean-inspired. Spoon it next to grilled Greek chicken, tuck it into a shawarma platter, or serve it alongside grilled fish or roasted vegetables. It’s one of those recipes that elevates the entire meal

I love everything about traditional Mediterranean-style rice: the aroma of blooming spices, the golden color, and the fluffy-but-substantial texture. What I don’t love is the heavy, sleepy feeling that can follow a big side of rice.

So I made one simple upgrade: I added chickpeas.

They blend right into the rice, adding protein and fiber without changing the flavors that made me love the dish in the first place. The result is still warm, fragrant, and comforting, but it’s also a meal that keeps me feeling satisfied instead of reaching for another snack an hour later.

That’s really how most Kale & Berries recipes begin. I ask myself one simple question:

Tips for Perfect Turmeric Rice

Add the lemon juice after the rice has finished cooking. Heat dulls fresh citrus, so stirring it in at the end keeps the flavor bright.

If you’re making this for meal prep, let the rice cool slightly before refrigerating. This helps prevent excess steam from making the rice soggy.

Description

Fragrant, golden basmati rice with chickpeas and fresh lemon — a Mediterranean-inspired side with a simple protein-and-fiber upgrade that keeps it just as comforting, but more satisfying.


Ingredients

For the Rice
  • 2 Tbsp extra-virgin olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 2 cups basmati rice, rinsed until the water runs clear and well drained
  • 3 1/4 cups low-sodium chicken broth
  • 1 bay leaf
  • Zest of 1 lemon
  • 1 tsp kosher salt, or to taste (adjust depending on your broth)
  • 1 (15-ounce) can chickpeas, drained and rinsed
To Finish
  • 1/2 cup chopped fresh parsley, fresh mint, or a combination of both
  • Juice of 1/2 to 1 large lemon, to taste
  • Freshly ground black pepper, to taste (optional)

Instructions

1️⃣ Sauté the aromatics
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook for 5–7 minutes, stirring occasionally, until softened and translucent. Stir in the garlic and cook for about 30 seconds, until fragrant.

2️⃣ Bloom the spices
Add the turmeric and cumin. Cook for about 30 seconds, stirring constantly, until fragrant. Have the broth measured and ready to pour in so the spices do not burn.

3️⃣ Toast the rice
Add the well-drained basmati rice and cook for 1–2 minutes, stirring frequently, until the grains are lightly toasted and evenly coated in the spices.

4️⃣ Simmer the rice
Pour in the chicken broth. Stir in the lemon zest, bay leaf, and salt, scraping up any flavorful browned bits from the bottom of the pot. Bring to a gentle boil, then reduce the heat to low, cover tightly, and cook for 10 minutes.

5️⃣ Add the chickpeas
Quickly remove the lid and scatter the chickpeas evenly over the rice. Cover immediately and continue cooking for 5 more minutes, or until the rice is tender and the liquid has been absorbed.

6️⃣ Rest and finish
Remove the pot from the heat and let it rest, covered, for 10 minutes. Discard the bay leaf. Add the lemon juice and parsley, then gently fluff the rice with a fork until everything is evenly combined. Taste and adjust the seasoning with additional salt and freshly ground black pepper, if needed.

 

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of broth or water to loosen the rice.

Vegetarian Option: For a vegetarian and gluten-free version, substitute vegetable broth for the chicken broth.

Salt: Broths vary widely in sodium. If using a regular-sodium broth, start with about ½ teaspoon kosher salt and adjust to taste after cooking.
