Description
A silky, chilled gazpacho soup with a nutritional edge — canned tomatoes for more bioavailable lycopene, silken tofu for creaminess and protein, finished with avocado, cucumbers, red peppers and feta for a bowl that’s as filling as it is refreshing.
Ingredients
- 1 (28-ounce) can high-quality whole peeled tomatoes, with their juices
- 1/2 (14-16-ounce) package soft tofu, or 11 ounces silken tofu (either works well)
- 3 Tbsp extra-virgin olive oil
- 1/2 English cucumber, roughly chopped
- 1/2 medium red bell pepper, roughly chopped
- 1/2 small sweet onion, roughly chopped
- 2 garlic cloves
- 1/4 cup loosely packed fresh basil
- 2 Tbsp red wine vinegar
- 1-1 1/2 tsp kosher salt, to taste
- Freshly ground black pepper
- 1/4 cup diced English cucumber
- 1/4 cup diced red bell pepper
- 1/4 avocado, diced
- 2-3 Tbsp crumbled feta cheese (about 3/4 ounce)
- Fresh basil leaves
- Freshly ground black pepper
- Optional drizzle of extra-virgin olive oil
- Optional toasted whole wheat or sourdough bread
Instructions
1️⃣ Blend the soup
Add the tomatoes with their juices, chopped cucumber, chopped red bell pepper, onion, tofu, garlic, basil, red wine vinegar, olive oil, salt, and several grinds of black pepper to a high-speed blender. Blend for 1–2 minutes, or until completely smooth and silky.
2️⃣ Adjust the seasoning
Taste and adjust with additional salt, black pepper, or a little more red wine vinegar if you’d like a brighter finish.
3️⃣ Chill
Transfer the soup to an airtight container and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to develop.
4️⃣ Serve
Stir well before serving. Divide among bowls and top each with the diced cucumber, diced red bell pepper, diced avocado, crumbled feta, fresh basil, and freshly ground black pepper. Finish with a light drizzle of extra-virgin olive oil, if desired, and serve with toasted whole wheat or sourdough bread.
Notes
- Want a brighter, tangier gazpacho? Add a little more red wine vinegar, tasting as you go. The tofu softens the tomatoes’ natural brightness, so an extra splash of vinegar can help bring the flavors back into balance.
- Basil or cilantro? Basil gives this soup a classic Mediterranean flavor and broad appeal. If you love cilantro, feel free to swap it in for a brighter, more Southwestern twist.
- Soft or silken tofu? Both work well. Soft tofu is a little easier to portion and store, while silken tofu creates an even silkier texture.
- Short on time? Blend in 4–6 ice cubes and serve immediately if you don’t have time to chill the soup. The flavors won’t be quite as developed as they are after a few hours in the refrigerator, but it’ll still be cool, refreshing, and delicious.
