September is still corn season — and this soup is exactly what to do with it.

Corn Season Meets Soup Season

Here’s the thing about the shift from summer to fall: it never happens all at once. One morning in September you step outside and it’s just a little cooler, and suddenly soup feels right again — even though the farm stand down the road is still stacked with sweet corn. This chowder lives right in that overlap.

And making this soup could not be easier. Frozen corn means you skip the shucking entirely (more on why that’s not a downside below), everything simmers in one pot, and blending half the soup gives you a rich, creamy base without a drop of heavy cream, flour, or butter. Tender shredded chicken and creamy cannellini beans make it filling enough for a weeknight dinner; a poblano gives it just enough warmth to feel like fall.

The myth: Corn’s carbs rapidly spike blood sugar.

The reality: Not in whole-kernel form (fresh, frozen, or canned — like this recipe). Processed corn products (cornmeal, corn flour, corn syrup) are a different story.

✔️ Glycemic impact: Low-to-moderate glycemic index, low glycemic load per serving — digested gradually, more like an apple than white bread.

✔️ Sugar: ~5–6g per medium ear — about a third of an apple’s, half a banana’s.

Corn is already a smart carb on its own — and this soup makes it even better. Chicken, beans, and olive oil add extra protein, fiber, and healthy fat, while the poblano, onions and celery brings in more veggies. Together, that’s what keeps you full and steady for hours. 

 

Creamy Without Cream

No heavy cream, no flour, no butter — and yet this chowder is genuinely creamy. The trick is blending about half the soup (corn, beans, potato, and all) until smooth, then stirring it back into the pot with the rest of the ingredients left whole. You get the best of both: a velvety, satisfying broth and plenty of texture from the remaining corn kernels, beans, and vegetables. An immersion blender works too if you want to skip the transfer — just pulse it directly in the pot, blending less than you think you need to, since it thickens more as it sits.

Storage & Meal Prep

Store it in an airtight container in the fridge for up to 4 days. This chowder is an excellent make-ahead meal — the flavors actually deepen overnight. 

It also freezes reasonably well for up to 3 months, though it’s worth knowing that the potato cubes may turn slightly grainy after thawing — that’s just what happens to potatoes in the freezer, not a sign anything went wrong. Since half the soup gets blended, this is far less noticeable here than in a fully chunky potato soup.

To reheat, thaw overnight in the fridge, then warm gently on the stove over low heat (avoid a hard boil, which can also make the chicken tough) — add a splash of broth if it’s thickened up more than you’d like. Hold off on adding the lime juice, scallions, cilantro, avocado and yogurt until you’re ready to serve — they’re best added fresh so their brightness doesn’t fade in storage.

How This Chowder Comes Together

Sauté the vegetables: Cook onion, poblano, and celery in olive oil, 5–7 minutes, until softened.

Simmer the chowder: Add frozen corn, potato, beans, and broth; nestle in chicken breasts. Bring to a gentle boil, then reduce to low and simmer 20 minutes, or until the chicken is tender.

Blend half the chowder: Blend about half the soup until smooth and creamy, or use an immersion blender directly in the pot, leaving plenty of corn, beans, and vegetables whole.

  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, diced
  • 1 large poblano pepper, seeded and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper
  • 3 cups frozen corn, no need to thaw
  • 1 medium Yukon Gold potato, cut into 1/2-inch cubes
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1-2 tablespoons fresh lime juice, to taste
  • 2 scallions, thinly sliced
  • 1/4 cup chopped fresh cilantro

Instructions

1️⃣ Sauté the vegetables

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, poblano, and celery and cook for 5–7 minutes, stirring occasionally, until softened.

2️⃣ Add the aromatics and spices

Stir in the garlic, cumin, smoked paprika, oregano, salt, and black pepper. Cook for about 30 seconds, until fragrant.

3️⃣ Simmer the chowder

Add the frozen corn, potato, cannellini beans, and chicken broth. Nestle the chicken breasts into the broth. Bring to a gentle boil, then immediately reduce the heat to low. Partially cover and simmer gently for 20 minutes.

4️⃣ Check and shred the chicken

Transfer the chicken to a cutting board. If it pulls apart easily with two forks, shred and set aside. If not, return it to the pot and simmer gently for another 5–10 minutes, or until tender and cooked through. Keep the simmer low and slow—boiling too vigorously can make the chicken tough.

5️⃣ Blend half the chowder

Transfer about half the soup to a blender and carefully blend until smooth and creamy, then return it to the pot. Alternatively, use an immersion blender to partially blend the soup directly in the pot, leaving plenty of corn, beans, and vegetables whole.

6️⃣ Finish and serve

Return the shredded chicken to the pot and simmer gently for 3–5 minutes. Add more broth as needed to reach your desired consistency. Remove from the heat and stir in 1 tablespoon of lime juice. Taste, then add more lime juice, salt, or pepper as needed. Ladle into bowls and top with avocado, cilantro, scallions, and a dollop of plain Greek yogurt for a cool, creamy contrast and a little extra protein, if desired.
