Description

Creamy pumpkin chia pudding layered with tangy Greek yogurt and a toasty graham pecan crunch. It tastes like pumpkin cheesecake and gives you about 20 grams of protein per serving, with no blender or protein powder needed.

Ingredients

Units Scale
  • 1 cup milk of choice
  • 1/2 cup plain Greek yogurt (whole-milk recommended; 2% works)
  • 1/2 cup pure pumpkin purée (not pumpkin pie filling)
  • 1 1/2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon pumpkin pie spice
  • Pinch of kosher salt
  • 1/4 cup chia seeds
  • 2 tablespoons hemp hearts
  • 1/2 cup plain Greek yogurt (whole-milk recommended; 2% works)
  • 1/2 cup crushed graham crackers (about 2 full sheets)
  • 2 tablespoons chopped toasted pecans

Instructions

  1. Combine the ingredientsAdd the milk, ½ cup Greek yogurt, pumpkin purée, maple syrup, vanilla, lemon juice, pumpkin pie spice, and salt to a medium bowl.
  2. Whisk until smoothWhisk everything together until smooth and creamy.
  3. Add the seedsAdd the chia seeds and hemp hearts to the pumpkin mixture.
  4. Stir and chillStir thoroughly to prevent clumping. Let sit for 10 minutes, then stir again. Cover and refrigerate for at least 4 hours or overnight.
  5. Prepare the toppingsChop the toasted pecans and crush the graham crackers.
  6. Assemble and serveDivide the pudding between two jars. Top each with 2 tablespoons of Greek yogurt, then sprinkle with crushed graham crackers and toasted pecans just before serving to keep them crunchy.

Notes

  • Meal Prep Tip: Prepare the pumpkin chia pudding ahead of time and divide it between airtight jars. Add the Greek yogurt layer, cover, and refrigerate for up to 4 days. Keep the graham crackers and pecans separate until just before serving so they stay crunchy.
  • Toasting Pecans: Toast the pecans in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant. Watch closely to prevent burning.
