Ingredients:
avocado oil
tortilla
eggs
green cabbage
carrot
avocado
hemp hearts
shredded cheese
salt
black pepper

Instructions:

1️⃣ Mix the eggs and veggies
In a bowl, combine the shredded cabbage, shredded carrots, and eggs. Season with salt and pepper and whisk until well mixed.

2️⃣ Start cooking the eggs
Heat 1 tablespoon of oil in a medium nonstick skillet over medium heat. Pour the egg and veggie mixture into the skillet and spread it into an even layer.

3️⃣ Cook until set
Let the mixture cook until the bottom is set and lightly golden.

4️⃣ Flip and layer
Carefully flip the entire egg mixture so the cooked side is on top. Sprinkle the shredded Gruyère evenly over the surface, then place the tortilla on top.

5️⃣ Flip again
Once the eggs are cooked through, flip the entire wrap so the tortilla is now at the bottom.

6️⃣ Add avocado and hemp hearts
Arrange the avocado slices over half of the tortilla and sprinkle the hemp hearts over the avocado. Add a drizzle of sriracha, chili oil or harissa if desired.

7️⃣ Fold and toast
Fold the wrap in half and gently press down. Cook both sides for 1–2 minutes per side, until the tortilla is crisp and golden and the cheese is melted.

8️⃣ Serve warm
Slice and serve immediately — a delicious balance of protein, fiber, and healthy fats to start your day.

Storage & Meal Prep

Make your mornings even easier with a few simple prep steps:

Prep the Veggies Ahead

  • Shred cabbage and carrots up to 3–4 days in advance
  • Store in an airtight container for quick assembly

Make the Egg Mixture Ahead

  • Cook the veggie–egg layer without the tortilla
  • Cool and store in the fridge for up to 3 days
  • Reheat in a pan, add cheese + tortilla, and finish the wrap fresh

The tortilla crisps up beautifully when cooked fresh, so it’s best to assemble just before eating. Freezing is not recommended. Cabbage and eggs release moisture when frozen.
