2️⃣ Blend until crumbly
Transfer warm pistachios to a high-powered food processor and add a pinch of salt. Blend until they break down into a coarse crumble.

3️⃣ Keep blending — don’t stop early and don’t give up!
Pistachios move through stages: crumbly → sandy → thick paste → creamy butter.
Scrape down the sides as needed and continue blending. Continue the process and don’t give up.  It will take some effort, but you will see it turn creamy. This process can take between 5-8 minutes or more, depending on your blender.
